Why wouldn't options add cash to the company's coffers?

Each option, in this case as disclosed in the Q3 FS, allows the employee or officer to acquire one CUU share at the exercise price. When the options are exercised, new shares are issued from the company's treasury and the cash it receives goes to the company.
