joe here's a simple one, but great sandwich.

cattleman sandwich-

take sourdough bread and cheddar cheese, grill like you would a grill cheese

on the side grill some shredded beef mixed with minced ortega chile's

add the beef/chiles to the sandwich and finish grilling......awesome!

goes well with home cut fries....

note: chile's must be green ortega's...they're not so easy to find anymore..try a mexican delicatessan..
