10 AM: getting ready...

Warming up to room temp after a nite with rub in the fridge..

11 AM: hardwood charcoal is ready.. time to put 'em on.,

4 PM: 4 1/2 hrs in... mopping & rotating.. ~2 hrs left..

low & slow wins.. :)
