If you have ever dealt with a chef, today we will serve this, tomorrow, this....

As of 2 hours ago, I understood that he was talking of these three specials. Maybe tomorrow he may change his mind. (Or maybe I misunderstood).

He did however stress that :

Reservations are required as seating is limited
