Why does a co that's mainly trying to generate interest in a big copper/gold project, still call itself "Uranium"?

Because changing a company name is not something that can be done for free.  For the time being, I'm sure many of us woud prefer the company focus on funding a drilling program over spending on such a nonessential matter.  ...and that does make sense, no?
