It seems my previous post did not acccount for the actual French pronunciation of "confit", which in my ignorance, I assumed to be somhow related to the American word "comfort". My apologies for any offence taken.
After consulting with Kloock, who speaks fluent Francias, and used meet Julia Child for a drink after work, I have learned that "confit" is pronounced "coffee". (Though you have to hod your nose and put the accent on the last syllable.)
Now THAT makes more sense. Old French coffee pots are recycled and used like "tupperware" to preserve natural race horses. I should have anticipated something clever like this from the same folks who have trained pigs to hunt by hiding chocolate truffles (a favorite of pigs) in the oak forrests.
Now, back to statistics.
